Something Warm From My Kitchen
There's something so comforting about a warm bowl of homemade soup, and today I decided to try making chicken corn soup.
Like many dishes I've learned to cook over the years, this wasn't something I already knew how to make. I found a recipe online, learned the basics, and headed to the kitchen to give it a try.
That's actually one of the things I enjoy about cooking. I don't have to know how to make everything—I just have to be willing to learn, experiment, taste, and make it my own.
And this time, the result was definitely worth remembering. ❤️
👩🍳 Where I Learned It
My inspiration came fromDaddy Lau's Chicken Corn Soup recipe from Made With Lau.
I followed the basic cooking method from his recipe but made a few adjustments based on what I had available and how I wanted my soup to taste.

🍲 How I Made It My Own
For my version, I still used chicken breast, finely minced carrots, one beaten egg, cornstarch, chicken powder, and sesame oil.
But I made a few simple changes.
Instead of using corn kernels and blending them into a puree, I used Great Value cream-style canned corn from Walmart and added it directly to the soup. It made the preparation incredibly easy and gave the soup that creamy corn texture I was looking for.
I also substituted black pepper for white pepper and used green onions instead of cilantro.
And because one pot of soup never seems to go very far in our house 😂, I made enough for approximately six servings instead of four.
One ingredient I was especially glad I kept was the chicken powder. It really helped enhance the savory flavor of the soup.
❤️ The Result
Warm, creamy, savory, and comforting.
Not bad for something I learned by finding a recipe online and simply deciding, “I'm going to try making this today.” 😂
And that's part of what I want my Taste Journal to be about.
I'm not a professional chef. I'm simply someone who enjoys discovering food, learning how to make dishes that look delicious, adapting them in my own kitchen, and sharing the results with the people I love.
Some recipes will come from our travels. Others will come from family traditions. And sometimes, like this one, they'll begin with a little curiosity and an online recipe that inspires me to try something new.
And apparently, this chicken corn soup has earned one more distinction...
